Vietnamese Rice Noodles

One package rice noodles, soaked in cold water, then drained. Boil noodles for about 3 minutes, or until they are cooked to your liking.

Add:

1 chopped cucumber

2 grated carrots

1/2 cup chopped cilantro

1/2 cup chopped peanuts

1/2 cup bean sprouts

Douse with Sweet and Sour Peanut Sauce and enjoy on a hot summer day…or a cold winter day…or any day, really. Also great with the protein of your choice!
