Melissa’s Salsa

Mix the following ingredients together in a large mixing bowl:

15-20 seeded and chopped tomatoes – I like plum.

3 (chopped) sweet peppers (orange looks nice) I don’t use green…

2-3 (finely chopped) fresh jalepeno peppers

*BE CAREFUL – use gloves when chopping. Don’t rub eyes!

1 (finely chopped) large sweet onion – Vidalia or red onion

1 bunch of cilantro – hold bunch, rip off stems, wash and then chop up the pile

a couple shakes of hot sauce

2 Tbsp. salt – add this close to the time of serving

3 Tbls sugar

1 tsp. pepper

2 big Tbls. Garlic

3 Tbls. lime juice (or the juice of 2 fresh limes)

2-3 ears of corn (or about 1-2 cups of frozen corn)

1 can of black bans drained

1 can of black eyed peas drained

This can be made up to 24 hours ahead of time. Refrigerate until serving. Serve with Scoops!
