Sweet and Sour Peanut Sauce

1 cup rice wine vinegar

1 cup sugar

2 Tablespoons soy sauce

Sriracha or hot chili sauce, to taste

1 Tablespoon chopped garlic

1 teaspoon fish sauce (optional)

¼ cup chopped peanuts

Heat the vinegar and sugar in a saucepan until the sugar dissolves. Add soy sauce. Cook for 10 minutes over moderately high heat, until the sauce thickens just a bit. Remove from heat. Add chili-garlic sauce, fish sauce and garlic. Stir. Cool. Add chopped peanuts before serving.
